1/4 c. soy sauce
1 Tbsp corn starch
1/2 tsp ground ginger, optional
1-2 Tbsp vegetable oil
1/2 to 1 pound meat, cut in 1/4 in. slices
2 c. sliced vegetable, any combination (fresh or frozen)
Mix soy sauce, cornstarch, and ginger for marinade. Pour over meat and set aside. Clean and slice vegetable (if fresh). Heat a heavy skillet over med heat for about 30 seconds to 1 min. Add 1-2 Tbsp of oil. Spoon meat out of marinade and add to hot oil. Stir-fry until lightly browned. Add vegetable and stir-fry till heated. Add reserved marinade plus 1/2 c. water. Stir until sauce thickens and clears. Serve over steamed rice, cooked noodles, or chow mein noodles.
