1 lb med red potatoes, quartered
3 lbs beef chuck roast
1 1/2 tsp dried rosemary
1 tsp salt
1 sm. onion, diced
1 c. carrots, chunked
3 Tbsp dijon mustard
1/2 tsp dried thyme
1/2 tsp pepper
1 1/2 c. beef broth
Arrange potatoes and carrots in crockpot. Place beef in pot. Mix mustard, rosemary, thyme, salt, and pepper. Spread evenly over beef. Sprinkle onion over beef. Pour in broth. Cover and cook on low 8-9 hours or til done.
