1 1/2 lb chicken breasts
3 Tbsp lime juice
1 Tbsp chili powder
1 c. frozen corn*
1 c. salsa
12 flour tortillas, warmed
Sour cream, cheese, and lettuce, optional
Place chicken in crockpot. Mix chili powder and lime juice and pour over chicken. Cover and cook on low 5-6 hours. Remove chicken and shred. Return to the crockpot. Stir in salsa and corn. Cover and cook 30 min. or til heated through. Serve in tortillas with sour cream, cheese, and lettuce if desired.
*I use 1 can of corn drained instead of frozen
Nutritional Facts: 1taco (prepared with fat-free tortillas, calculated without sour cream and cheese) equals 148 calories, 2g fat, 20g carbohydrates
