2/3 c. canned coconut milk
4 Tbsp sugar
2 large cloves garlic, minced
1 1/2 tsp minced fresh ginger
1/8 tsp salt
1/8-1/4 tsp cayenne pepper
1/3 c. chunky peanut butter
3 Tbsp lemon juice
Combine coconut milk, sugar, garlic, ginger, salt and pepper in 2 qt saucepan, bring to a boil over high heat. Cook over med heat for 5 min, stirring occasionally. Stir in peanut butter and lemon juice, cook and stir 3 min.
If sauce separates or is too thick, stir in 1-2 Tbsp boiling water. Makes about 3/4 c. Serve over chicken.
If peanut butter contains sugar decrease sugar to 3 Tbsp.
