1 lb ground beef
1 lg onion, diced
1 clove garlic, diced
1 (10 oz) can enchilada sauce
1 (28 oz) can tomatoes, slightly blended
1 (8 oz) can tomato sauce
1/2 tsp salt
1 tsp chili powder
1 (4 oz) can chopped olives
16-18 corn tortillas torn into 3-4 strips each.
1/2 c. monterey jack cheese
Brown beef, onion and garlic, drain. Add enchilada sauce, tomatoes, tomato sauce, salt, and chili powder. Simmer uncovered for 20 min. Add olives. Put 1/2 to 1 c sauce in bottom of 9 x 13 baking dish. Line pan with 1/2 tortillas. Cover with 1/2 the sauce mixture. Repeat with tortillas and sauce. Top with cheese. Cover with foil. Bake at 350 for 25-30 min until hot and bubbly or microwave on high 12-15 min turn dish twice.
