I have been doing a low-iodine diet for the last two weeks and so dinner at our house has been hit and miss. I have made a few concoctions that according to the fam are good. (I can't eat them due to the diet, so I'm taking their word for it)
1-2 chicken breasts, chunked
3-4 medium potatoes, chunked
carrots, chunked
onion, diced
garlic, minced
ranch
shredded cheese
Combine desired amounts of ingredients in a 8 x 8 dish or 9 x 13 (depending on amount of food). Bake in oven on 450 for 30-45 min. until veggies are tender and chicken is cooked.
My family loved it. My two kidlets even ate it super good. Which for Hunter doesn't say much (he eats everything) but for McKenna says a lot!
*Next time we would add a little bacon
