This came from a Costco cookbook. (the one they hand out every year at Thanksgiving time)
1/2 c. olive oil
1 c. chopped onion
3 Tbsp garlic
16 oz baby bella/crimini mushrooms, sliced
3/4 c. flour, divided
1 1/2 tsp salt
pepper, to taste
1 Tbsp italian seasoning
2 lbs chicken pieces
2 1/2 c. marsala wine or chicken broth
3 Tbsp fresh lemon juice
1 Tbsp sugar
1 Tbsp soy sauce
1/8 tsp Worcestershire sauce
1 tsp crushed red pepper flakes
1/3 c. fresh basil, chopped
1/3 c. fresh parsley, chopped
In skillet, heat small amount of oil. Saute onion and garlic for about 2 min. Mix mushrooms with 2 Tbsp flour. Add to skillet and saute until mushrooms are heated and flour is lightly browned. Remove from pan.
Combine remaining flour, salt, pepper, and italian seasoning. Dredge chicken pieces. Use remaining oil and brown chicken pieces.
Stir in marsala, lemon juice, sugar, soy sauce, W sauce and red pepper flakes. Simmer for 12 min. Stir in basil and parsley. Continue to simmer, uncovered, 10 min or until chicken is done.
Serve with potatoes/pasta/rice & veggie
*We served ours with boiled red potatoes and poured some of the sauce on the potatoes.
I didn't do as much red pepper flakes as it called for simply for our kids taste buds
