I was searching for this and realized I've never posted it. I can't believe it. It's one of our favorite winter time soups.
6 c. diced, peeled potatoes
5 c. water
2 c. diced onions
1/2 c. diced celery
1/2 c. chopped carrots
1/4 c. butter (I usually chunk mine)
4 tsp. chicken bouillon granules
2 tsp salt
1/4 tsp pepper
12 oz can evaporated milk
3 Tbsp chopped fresh parsley (I never have fresh, so I use dried)
8 oz. shredded cheese
Combine all ingredients except milk, parsley, and cheese in slow cooker. Cover. Cook on high 7-8 hours, or til veggies are tender.
Stir in milk and parsley. Stir in cheese until melted. Heat thoroughly.
*We add cooked bacon pieces
