I found this recipe on Pintrest. I would not eat it as a soup. My husband served an LDS mission to Brasil. He loves his beans and rice. I think this recipe was really good and he liked it a lot! I did make changes to my recipe. I knew I wasn't serving it as a soup and didn't want it as watery. We served it over rice like they do in Brasil.
2 cans black beans, drained NOT rinsed
1 can chicken broth
1 1/2 c. water (I didn't add much water, just enough to thin it out to the desired thickness)
2 Tbsp oil
1 c. onion
2 cloves garlic
2 tsp chili powder
1/4 tsp cumin
cooked white rice
Mix everything together and cook in crockpot on low for 2-4 hours or until beans are tender. Serve over white rice.
