Gnocchi

When I first had gnocchi I fell in love. I have always wanted to make it but it just seemed like a daunting task. I wish I would have caved and done it along time ago. It was so dang easy.

2 medium potatoes, peeled
2 c. flour
1 egg, slightly beaten
pinch of salt

Cook potatoes. Drain and mash.

Take 1 c. of potatoes  in a bowl. Add flour, eggs, and salt. Knead until a ball forms. Divide into 4 portions. Roll into long snakes. Cut in 1/2 in. pieces. Cook for 3-5 min in boiling water. Serve with your favorite sauce on top.
