These were easy and yummy. Relatively healthy too.
1 c. peanut butter
2 eggs
1/2 c. brown sugar
2/3 c. quick oats
1 tsp baking soda
2/3 c. chocolate chips
1 tsp vanilla
Preheat oven to 350. Grease pan. Mix oats and baking soda. In another bowl mix peanut butter, eggs, sugar, and vanilla. Mix with wooden spoon til uniform and creamy. Add oats and chocolate chips. Mix well. Bake 9-11 min or light brown edges.
