Blackened Chicken

From:Quick Cooking-July/Aug 2004

1 Tbsp paprika
1 1/2 tsp salt, divided
1 tsp lemon pepper seasoning
1 1/2-2 tsp pepper, divided
1 1/3 c. mayo
2 Tbsp cider vinegar
4 tsp sugar, divided
1 tsp. garlic powder
1 tsp. cayenne pepper
4 chicken breast halves
2 Tbsp water

In small bowl combine paprika, 1 tsp sugar, 1 tsp salt, garlic powder, lemon pepper, cayenne, & 1/2-1 tsp pepper. Sprinkle both sides of chicken. Set aside.

In another bowl combine mayo, water, vinegar, & remaining sugar, salt, & pepper. Cover & chill 1 cup for serving. Save remaining sauce for basting.

Grill chicken on med. heat till done, basting frequently with remaining sauce. Serve with reserved sauce.
