Buffalo Chicken

From: Simple & Delicious-Jun/Jul 2010

4 chicken breats
2 eggs
3 Tbsp canola oil
1/4 c. shredded provalone
1/4 tsp salt & pepper
1/2 c. seasoned bread crumbs
1/4 c. buffalo wing sauce
1/4 c. shredded mozzarella

Flatten chicken to 1/2 in. thick. Sprinkle with salt & pepper. In shallow bowl, whisk eggs. Place bread crumbs in another shallow bowl. Dip chicken in eggs, then coat w/ bread crumbs.

In lg. skillet over med. heat, cook chicken in oil for 7-10 min on each side or till chicken is done. Add wing sauce during last 2 min. Turn to coat chicken. Sprinkle with cheeses. Cover & cook till melted.

*I can't find shredded provolone so I buy the sliced stuff and put the mozzarella on first and then my provolone.
