4 chicken breasts
1/4-1/2 tsp pepper
2 Tbsp butter
juice of 1/2 lime or lemon
2 tsp dijon-style mustard
1/2 tsp salt
2 Tbsp olive oil
3 Tbsp chives or green onions
3 Tbsp parsley
1/4 c. chicken broth
Pound chicken. Sprinkle with salt & pepper. Heat 1 Tbsp oil & butter in lg. skillet. Cook chicken till done. Remove to plate. Add chives or onions, lime juice, parsley, & mustard to pan. Cook 15 seconds whisking constantly. Whisk in broth. Stir til smooth. Whisk in remaining butter & oil. Pour sauce over chicken. Serve.
