Fiesta Rice

1 can chicken broth
1/2 c. water
1/2 c. salsa
2 c. minute rice

Heat can of broth, water, and salsa to a boil. Stir in minute rice. Cover and remove from heat. Let stand 5 min. Fluff with fork.

*Serve with chicken quesadillas.
