Fresh Apple Muffins

From:Richard, Norma, Delaney, Rayn

1 c. sugar
3/4 c. vegetable oil
2 eggs
1 tsp vanilla
2 c. flour
1 tsp baking soda
1 tsp cinnamon
1/2 tsp salt
1 3/4 c. apples-peeled & chopped
1/2 c. raisins
1/2 c. pecans or walnuts

With an electric mixer, beat sugar & oil for 2 min. Then beat in eggs and vanilla.
In separate bowl, combine flour, baking soda, cinnamon, and salt. Stir the dry ingredients into the oil mixture JUST until all are combined. Fold in apples, raisins, and nuts. Fill 12 greased or lined muffin cups. Bake at 400 for 25 min or dry toothpick stage.
