I personally like this even better than KFC, but you be the judge.
8 c. finely chopped cabbage or coleslaw salad mix
1/4 c. shredded carrot, unless using mix
Dressing:
1/2 c. mayo
1/4 c. milk
2 1/2 Tbsp lemon juice
1/3 c. sugar
1 1/2 Tbsp white vinegar
1/2 tsp salt
1/4 c. buttermilk*
1/8 tsp pepper
Cut cabbage into small pieces. In salad bowl, combine the dressing ingredients in separate bowl. Beat until smooth. Add cabbage & carrots. Mix well. Cover and refrigerate for at least 2 hours before serving.
Serves 6-8
*1 3/4 Tbsp cream of tartar & 1 c. milk can be substituted for buttermilk
