1/3 lb ground beef
3 Tbsp chopped onion
3/4 c. stewed tomatoes, chopped
1/8 tsp garlic powder
1/8 tsp chili powder
dash salt & pepper
2 flour tortillas
2/3 c. monterey jack cheese
2 Tbsp sliced ripe olives
In small skillet cook beef and onion til done. Drain. Stir in the tomatoes, garlic powder, chili powder, salt, and pepper. Remove from heat.
Place 1 tortilla in a 3 cup round baking dish coated with non-stick cooking spray. Top with half of the meat mix and cheese, repeat layers. Sprinkle with olives. Bake uncovered at 350 for 15-20 min or until heated through.
*I used a whole can of tomatoes (like a 15 oz size can)
*You may want more tortillas
