Tortellini Soup

2 lg. garlic cloves
1 Tbsp margarine
3 cans chicken broth
Salt & Basil to taste
Parmesan cheese
2 cans Italian stewed tomatoes
1-10 oz pkg frozen spinach
1-16 oz pkg cheese tortellini

In lg. saucepan saute crushed garlic in 1 Tbsp margarine. Add 3 cans chicken broth and package of tortellini. Bring to a boil. Reduce heat and simmer for 10 min. Pour sauce from 2 cans stewed tomatoes into broth, chop tomatoes and add to broth. Chop defrosted spinach and add to soup. Add salt & basil to taste. Cook through. Serve with parmesan cheese. Sprinkle on top.
