Cafe Rio Pork

This is delicious! We made burritos with it and then tomorrow we are doing salad with it. This makes enough for a couple of meals too.

5-6 lbs pork shoulder, butt, or a fattier type pork roast
1 can of coke (not diet)

Marinade in coke overnight.
Cook on low 8 hours.
Drain & shred

Add:
1 can (15oz) red enchilada sauce
2 cloves garlic, minced
1 small can green chilies, diced
1 c. brown sugar
(I mixed in a small bowl first then poured it over my pork)

Cook 30-60 more min.
