Zucchini Pizza Casserole (don't judge it til you try it)

4 c. shredded unpeeled zucchini

½ tsp salt

2 eggs

½ c. grated parmesan cheese

2 c. mozzarella, divided

1 c. cheddar cheese, divided

1 lb. ground beef

½ c. chopped onion

1 can (15 oz) Italian tomato sauce

1 med. Green pepper, chopped

Chopped garlic

Place zucchini in strainer, sprinkle with salt. Let stand for 10 min. Squeeze out moisture. Combine zucchini w/ eggs, parmesan and half the mozzarella and cheddar cheese. Press into greased 9 x 13 dish.

Bake uncovered, at 400 for 20 min. Meanwhile, cook beef and onion til done. Drain. Add tomato sauce, spoon over zucchini mix.

Sprinkle with remaining cheese, add green pepper and garlic. Bake 20 min. longer or til heated through.
