I wanted potatoes for our side dish with our dinner tonight but I wanted something besides mashed potatoes, since we had that 3 nights ago. But I didn't want funeral potatoes. So I made my own concoction. It was pretty darn good. Our 5 year old said, "These are pretty tasty, Mom!"
4-5 russet potatoes, thinly sliced
1/4 c. butter, melted
1/2 c. sour cream
4 oz. cream cheese, softened
Chives, to please
bacon bits, to please
Salt & pepper, to taste
shredded cheese, to please
Mix everything but potatoes in a small bowl. Once combined, pour over potatoes and stir well. Sprinkle with cheese and stir. Add more cheese if desired.
Cooking times may vary but approx. 400 degrees for 45 min to 1 hour. If you are using frozen hashbrowns it may take a little less time. I cooked mine in The Pampered Chef's "magic pot" and it estimated that it would take about 20 min at 400 but I cooked them for 40 min and they were still not 100% done, but done enough that my starving family could eat them. :)
