Chicken Pot Pie Cupcakes

These were another pintrest find. My sister-in-law told me about them and so I went searching. These are nice and easy and you can make as many or as little as you need.

1 chicken breast, cooked and diced
1 Tbsp Herbs De Provence (I didn't have this, nor do I know what it is)
1 can cream of chicken soup
1 tsp onion powder
1 c. frozen mixed veggies
1 tsp garlic salt
1 c. shredded cheese
2 (10oz) cans Pillsbury biscuits

Preheat oven to 400 degrees. In a lg. bowl, combine chicken cream of chicken soup, frozen veggies, cheese, and herbs/spices.
Lightly grease a 12-cup muffin tin and place biscuits into each cup, pressing into the bottom and up the sides.
Evenly spoon the pot pie mix into each biscuit cup. Slide into the oven and bake for about 15 mins. Check at the 12 min. mark.
Let rest for about 3 min and dig in!
