Spicy Smoky Refried Chicken Wraps

This came from a magazine my mom had. I won't lie, at first I was hesitant to make this. It just seemed like an odd combo. But we tried it and we LOVED it.

2 chicken breasts
juice of 1 lime
salt and pepper, to taste
15 oz can refried beans
1 tsp hot sauce, or to taste
1 tsp cumin
1 tsp smoked paprika
1 c. mozzarella
salsa, cilantro, sour cream, to garnish

Heat oven to 350 degrees. Coat a baking sheet with spray. Carefully slice each breast in half horizontally to create 2 thin fillets. One at a time, pound out each piece to be about twice as large. Sprinkle both sides with lime juice and season with salt and pepper. Arrange on prepared baking sheet, set aside.

In a medium bowl, mix together the refried beans, hot sauce, cumin, paprika, and cheese. Spread a quarter of the mixture evenly over each fillet.

Roll each fillet into a tight bundle. If needed, pin with toothpicks.

Spritz each bundle with cooking spray, then bake 25 min.

Serve topped with salsa, cilantro, and sour cream
