Roasted Carrots

1 small bag of carrots
1/4 c. olive oil
1 Tbsp balsamic vinegar
1/2 tsp salt
1/4 tsp pepper

Preheat oven to 450 degrees. Combine carrots, 2 Tbsp oil, vinegar, salt and pepper. Toss. Roast for 20-25 minutes. Toss occasionally. Cook til tender/firm. Drizzle w/ remaining oil.
