Since we moved to Georgia we don't have a Costco close (1 1/2 hours away). We always bought their tortillas that were fresh and just had to be cooked. They were the best tortillas ever! I decided to try my hand at making them. I have yet to find that perfect recipe but we are getting closer. These were not too bad and they are easy to make.
1 3/4 c. flour
3/4 tsp salt
1/4 tsp baking powder
1/4 c. shortening
1/2 c. hot water
1/4 c. flour, for dusting
Whisk flour, salt, and baking powder in a large bowl. Add shortening and work into flour mix til coarse crumbs are formed. Form a hole in the middle and add hot water. Knead til smooth. Place 1/4 c. flour on cutting board. Cover and rest 15 min. Roll out tortillas and cook.
*This made 6 tortillas when I made them with a 2 oz ball of dough.
