2 cups of dried cannellini beans
5 strips of bacon, cut into tiny pieces
1 med onion, diced
2 cloves garlic, minced
4 carrots, peeled & chopped
1 Tbsp fresh rosemary, chopped
4 c. chicken stock
1 Tbsp tomato paste
salt & pepper
Soak beans over night in water. Drain the next day. In lg stockpot, cook bacon til brown and crispy. Remove and let drain on paper towel.
Saute onion, garlic, and carrots til they start to get tender, about 5 min. Stir in rosemary. Gently pour in chicken stock and drained beans. Whisk tomato paste in until incorporated. Bring mixture to a boil, then cover and simmer gently for 45 min, stir occasionally.
