These were way easier than I ever thought.
2 med potatoes, peeled
2 c. flour
1 egg, slightly beaten
pinch of salt
Cook potatoes and drain. Mash them up.
Mix 1 c. mashed potatoes with flour, egg, and salt. Knead until a ball forms. Divide into 4 portions. Roll into snakes. Cut into 1/2 in. pieces.
To cook: Bring a pot of salted water to boil. Add gnocchi and boil 3-5 min or until they float.
To freeze: Place on pan, be sure to keep the separated, and place in freezer until frozen. Once frozen put them in a ziploc bag and freeze til you want them. To cook frozen gnocchi, pour directly into boiling water. Do not thaw them.
