1 lb. sliced fresh mushrooms
3 Tbsp butter
6 italian-marinated chicken breasts
3 Tbsp rice vinegar or white wine vinegar
1 1/2 c. whipping cream
3 Tbsp capers
1/4 tsp black peppers
Cook mushrooms uncovered in 1 Tbsp hot butter about 5 min. or till tender. Remove from skillet. Reduce heat to med. Add remaining 2 Tbsp butter and chicken breasts to skillet. Cook, uncovered, for 8-12 min or til done. Remove chicken from skillet. Remove pan from heat. Add vinegar, stirring to loosen bits off pan. Return skillet to heat. stir in cream, capers, and pepper. Bring to boil. Boil gently uncovered for 2-3 min or til thickened. Return mushrooms and cook through. Top chicken with sauce.
Serve over noodles.
