Cheddar Sauce:
1 c. chicken broth
3 Tbsp butter
2 stalks celery, diced
1 c. shredded cheese
1 c. half & half
1/2 onion, diced
3 Tbsp flour
In 2-quart pan heat butter and saute onions and celery. In another pan heat the broth and half & half. Once celery and onion are soft stir in flour and continue to cook stirring often for 2 min. Whisk in stock & half & half and whisk for 1 min. Whisk in cheese till melted. Set aside.
Casserole:
1 c. diced ham
1 c. broccoli
3 c. cooked penne pasta
1/2 c. shredded cheese
prepared cheese sauce
Preheat oven to 350. In lg. bowl toss all ingredients except cheese. Pour mix into 8 x 14 dish. Sprinkle cheese over casserole & bake 25 min or till golden brown.
