1 lemon
2 garlic cloves, crushed
1/4 c. loosely packed fresh oregano, chopped
1/4 c. loosely packed fresh mint leaves, chopped
1 Tbsp olive oil
1 1/2 tsp salt
1/2 tsp black pepper
From lemon, grate 1 tbsp peel and squeeze 2 tbsp juice. In small bowl, mix lemon peel and jice with remaining ingredients. With hand, rub herb mix over pork chops or a 3 lb. pork top loin roast. Cook pork til done. Garnish with mint and oregano sprigs to serve.
