Peanut Chicken Pockets

2 c. cubed cooked chicken
2 celery ribs, chopped
1/4 c. chopped peanuts
2 green onions, chopped
1 Tbsp lemon juice
4 pita breads, halved
8 tomato slices
1/4 c. chopped cucumber
1/4 c. bean sprouts
1/4 c. mayo
1 Tbsp parsley
1/4 tsp salt & pepper
8 lettuce leaves

In lg. bowl combine everything but pitas, lettuce, and tomato. Line pita halves with lettuce & tomato. Spoon chicken mixture into pitas. Serve
