Potato Kielbasa Skillet

1 lb. red potatoes, cubed
3/4 lb kielbasa, sliced
1 Tbsp olive oil
2 Tbsp cider vinegar
1/2 tsp dried thyme
4 c. fresh spinach
3 Tbsp water
1/2 c. chopped onion
2 Tbsp brown sugar
1 Tbsp dijon mustard
1/4 tsp pepper
5 bacon strips, cooked & crumbled

Place potatoes & water in microwave safe dish. Cover & microwave on high 4 min or til tender. Drain. In lg. skillet, saute kielbasa & onion in oil til onion is tender. Add potatoes, saute 3-5 min til kielbasa & potatoes are lightly browned. Combine brown sugar, vinegar, mustard, thyme, & pepper. Stir into skillet. Bring to a boil. Reduce heat, simmer, uncovered, for 2-3 min or til heated through. Add spinach & bacon. Cook & stir til spinach is wilted.
