2 Tbsp butter
5 tsp chili powder
2 tsp garlic powder
2 1/4 c. water
2 Tbsp flour
1 1/2 tsp cumin
6 oz can tomato paste
salt & pepper
Melt butter in saucepan. Make a roux by browning flour in melted butter. Add spices and tomato paste, stir till well blended into roux. Add water gradually, stirring constantly. Heat till boiling. Continue simmer and stirring until desired thickness is achieved. Taste every so often and adjust spices as needed. Once desired thickness & consistency use as a normal enchilada sauce.
