White Chili with Chicken

1 med. onion, chopped
2 garlic cloves, minced
2 Tbsp cornstarch
2 cans great northern beans, rinsed & drained
1 Tbsp lime juice
1-1 1/4 tsp cumin
1 jalapeno, chopped & seeded
1 Tbsp oil
2 Tbsp parsley
1/4 c. cold water
2 c. chicken, cubed & cooked
4 c. chicken broth

Cook onion, jalapeno, and garlic in oil til tender. Stir in broth, beans, parsley, lime juice, and cumin. Bring to boil. Reduce heat, cover and simmer 10 min. Stir occasionally. Combine cornstarch & water til smooth in separate bowl. Stir into chili. Add chicken, bring to a boil. Cook and stir 2 min until thickened.
