Artichoke Chicken

From: Taste of Home Casserole Cookbook

2 cans (14 oz) artichoke hearts, drained & quartered
2 Tbsp olive oil
3 garlic cloves, minced
2 2/3 c. cooked chicken
2 cans cream of chicken
1 c. mayo
1 tsp lemon juice
1/2 tsp curry powder
1 1/2 c. cheddar
1 c. seasoned bread crumbs
1/4 c. parmesan cheese
2 Tbsp butter, melted

In bowl combine artichokes, oil, and garlic. Place in greased 2 1/2 qt dish. Top with chicken. Combine soup, mayo, lemon juice, and curry. Pour over chicken. Sprinkle w/ cheddar cheese. Combine bread and parmesan cheese and butter. Sprinkle over top. Bake uncovered at 350 for 30-35 min.

*This is really good just by itself but we think it would be better over rice.
