1 lb. beef
1 sm. onion, chopped
4 3/4 c. uncooked egg noodles
1 can cream of mushroom soup
3/4 c. milk
SPINACH LAYER
3 Tbsp butter
1/2 tsp paprika
1/4 tsp pepper
1 c. milk
1/4 c. green onion, sliced
2 c. swiss
2 Tbsp flour
1/2 tsp salt
1/8 tsp nutmeg
2 pkg (10 oz ea) frozen spinach, dry
2/3 c. crushed french-fried onion
In skillet, cook beef and onion til done, drain. Cook pasta to pkg directions. Drain. In lg. bowl mix soup and milk til blended. Stir in beef mix and noodles. Set aside.
For Spinach Layer
In lg. pan, melt butter. Whisk in flour, paprika, salt, and pepper, and nutmeg til smooth. Gradually whisk in milk. Bring to a boil. Cook and stir for 1-2 min or til thick. Stir in spinach and green onion.
In shallow dish, layer 1/2 of beef mix and 1/2 of cheese. Top with spinach mix and rest of beef. Cover and bake at 375 for 35 min. Uncover, sprinkle w/ remaining cheese. Top with fried onion. Bake 5-10 min longer.
