Carrot Cake

From: Delinda Fields

3 c. grated carrots
1 tsp cinnamon
1 tsp vanilla
1 c. nuts, chopped
1 small can crushed pineapple, drained
2 1/2 c. flour
1 1/4 c. oil
1 1/2 tsp baking soda
4 eggs
2 c. sugar

Bake in a 9 x 13 at 350 for 45-50 min, or until done.

Frosting:
1- 8 oz pkg cream cheese, softened
1 lb box powdered sugar
1 1/2 tsp vanilla
1 stick butter, softened

Beat together till creamed. Frost cake when cool.
