Chicken Philly Sandwich

These were amazing! We loved them so much we had them again a week later and then again in the next months menu.

4 Tbsp butter, divided
2 Tbsp oil
1 lb. chicken, chunked
2 1/2 tsp lemon pepper
1 1/2 tsp cajun seasoning
1/2  Tbsp kosher salt
1 tsp pepper
1/2 onion, diced

rolls
4 Tbsp mayo

Heat 2 Tbsp butter and 2 Tbsp oil. Season chicken with lemon, cajun, salt, and pepper. When melted, add chicken and onions. Cook about 8 min. Lower heat and add cheese. Toast rolls with remaining butter. Spread mayo on bun. Put chicken, onion, and cheese.

Top with lettuce, tomato, bacon, mushrooms, peppers, and anything else you desire.

*I put peppers, onion, and mushrooms on ours. I also added the mayo to my buns and topped with the chicken mix and cheese and then baked it.
