1 pkg ranch dressing, dry
4 chicken breasts
1 c. chicken broth
1 Tbsp sugar
1/4 c. green onions
1 Tbsp corn starch
3 Tbsp butter
3 Tbsp lemon juice
1/2 tsp lemon zest
2 c. cooked rice
Mix salad dressing with cornstarch. Remove 2 Tbsp of mix to dust chicken. Reserve excess mix for sauce. In lg. skillet melt butter & brown chicken. Remove pan from heat, remove chicken. Stir together chicken broth, lemon juice, zest, & sugar. Whisk in reserved cornstarch mix. Add to skillet, cook & stir over low heat 1-2 min or til thick. Return chicken to skillet. Cover and simmer for 15 min, adding onions during last 5 min. Serve with rice mixed with parsley if desired.
*Makes enough sauce for 2 people
