Cheese Stuffed Jalapeno Meatballs (Smoked)
I've pretty much been dreaming of these since I made them. I did some with jalapeno and some without for the kiddos. I loved these! I usually only eat left overs once maybe twice, I ate these at least 4 times! We smoked ours on our traegar. I've been dying for decent weather again to be able to make these.

French Onion Beef Sliders
- 8 tablespoons (1 stick) butter, divided
- 2 large sweet onions, sliced
- 2 pounds ground beef
- 2 tablespoons beef base (such as Better than Boullion), divided
- 1 tablespoon Worcestershire sauce, divided
- Kosher salt and black pepper, to taste
- 24 slider buns
- 12-16 ounces gruyere cheese, chopped
- 2 tablespoons sesame seeds
- 1 tablespoon fresh thyme
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
Directions
- Melt 2 tablespoons of the butter in a skillet over medium heat. Add in the onions and reduce the heat to medium low. Cook, stirring occasionally, until lightly caramelized, about 25-30 minutes. If the onions start to look dry or burnt, add a tablespoon of water to the pan.
- In a large bowl, mix the ground beef with half of the beef base and half of the Worcestershire sauce. Season with salt and pepper.
- Add the beef to the skillet full of onions. Increase heat to medium-high and brown the beef, breaking it up and mixing with the onions as you go. Once browned, drain off excess grease.
- Preheat the oven to 350°F. Lightly grease a large baking sheet. Separate the tops from the bottoms of the slider buns. Fit the slider bottom buns tightly on the baking sheet.
- Evenly distribute the beef and onion mixture over the bottom buns. Top with the gruyere cheese. Cover with the top buns.
- In a microwave safe bowl, melt the butter with the remaining beef base. Stir in the remaining Worcestershire sauce and continue to mix until well-combined. Using a pastry brush, brush the beefy butter mixture over the top buns. Sprinkle with the sesame seeds, thyme, onion powder, and garlic powder.
- Bake the sliders until the cheese is fully melted and the tops of the rolls are lightly browned, about 20 minutes.

White Trash Sliders
1 pound ground beef
1 pound bulk pork sausage
1 pound Velveeta
1/2 teaspoon onion powder
1/2 teaspoon black pepper
24 slider buns or soft dinner rolls, toasted or steamed
Brown
ground beef and sausage until cooked through. Thoroughly drain pan
drippings from meat (I did this once half-way through cooking and then
again when the meat was done).
Combine
browned meat, Velveeta, onion powder and black pepper in a saucepan or
crock pot* and heat on low until cheese is melted and bubbly.
Serve on slider buns with lots of cheap beer.
*If you make this in a crock pot and heat it more than four hours, you may have to add a splash of milk as the mixture will thicken.

Melt in Your Mouth Pot Roast
This came from joyouslydomestic.com. We really liked this. We used less thyme and less rosemary.
Ingredients:
1 chuck roast (mine was 3 pounds)
Olive oil
1 pound carrots, peeled and cut into large chunks
2 pounds potatoes, peeled and cut into large chunks
1 onion, peeled and cut into large chunks
2 stalks celery, cut into large chunks (optional)
1 cup beef broth
1 tablespoons corn starch
SEASONING MIX -
2 tablespoons steak seasoning (mine is store-bought and has a blend of peppercorns, garlic, paprika, parsley and salt)
1 tablespoon kosher salt
1 tablespoon dried thyme
1 tablespoon dried rosemary
Directions:
Combine together seasoning mix in a small bowl. Set aside.
Coat both sides of meat with olive oil. Sprinkle on a third of the seasoning mix onto each side.
Sear both sides of the meat in a large skillet over medium-high heat. Transfer roast to slow cooker.
Place the vegetables in a large bowl. Drizzle on a little olive oil to coat vegetables. Sprinkle on the remaining seasoning mix. Add the vegetables to the same skillet that was used to sear the meat. Sauté for about five minutes - stirring occasionally.
Transfer the vegetables to the top of the roast in the slow cooker. Pour in the beef broth. Cover with lid.
Cook on low for 9 hours or on high for 6 hours.
Using a turkey baster, retrieve most of the cooking juices from the slow cooker. Transfer juices to a small sauce pan and bring to a simmer over medium heat on the stovetop. Whisk together the cornstarch with a little water. Blend into the pan juices while whisking. Bring back to a simmer until thickened. Taste and adjust seasoning as needed.
Transfer the roast and vegetables to a large platter. Ladle the gravy over. Serve immediately.

Philly Steak & Grilled Cheese
This is from sugardishme.com. Josh and I really liked these. Hunter liked them but they were a bit spicy for him.
Ingredients
- For the Steak:
- 1 pound flank steak, still partially frozen (see note)
- 1 tablespoon Worcestershire sauce
- 1 tablespoon oil
- 1 teaspoon coarse ground black pepper
- ½ teaspoon kosher salt
- ½ cup very thinly sliced onion
- ½ cup very thinly sliced bell peppers
- ½ cup button mushrooms, sliced
- For the Cheese Sauce:
- ½ tablespoon unsalted butter
- ½ cup COLD milk
- ½ tablespoon cornstarch
- 4 ounces shredded Horseradish Cheddar (or sharp white)
- For the Sandwiches:
- butter for the skillet
- 8 slices sourdough bread
Instructions
- Slice the steak very very thinly -- I cut mine into 2-3" strips, as thin as my knife would allow. Toss the sliced steak with the Worcestershire sauce. Set aside.
- Heat the oil in a large skillet. Add the steak, sprinkle it with the salt and pepper, and cook over medium high heat, turning occasionally to brown on all sides, about 8 minutes.
- While the steak cooks, slice your vegetables.
- Place the butter for the cheese sauce in a small saucepan and let it melt over medium low heat. Stir the cold milk and cornstarch together and then pour it into the melted butter. Let it heat up slowly.
- Remove the steak to a plate and add the onions, peppers, and mushrooms to the skillet it was in. Let them cook over medium high heat until they are tender, stirring occasionally, about 6 minutes.
- When the milk mixture is warm (it will be frothy - careful not to scorch it), remove it from the heat and stir in the cheese until it's smooth.
- Once the vegetables are cooked, add them to the steak and toss to combine.
- Melt a little butter (I just rub the stick in the pan) in the same skillet you used for the steak and vegetables. Add one slice of sourdough bread. Top the bread with the steak and veggie mixture. Spoon the cheese sauce over the steak. Top with the second slice of bread.
- Turn the sandwich to grill the second side and repeat with the other 3 sandwiches.
- EAT.

Buttered Beef
I got this from my neighbor Shayne & Amy. He got it off of a radio show. This was way better than I thought. It's so so simple I didn't think it could be that could. It was great! We didn't have any leftovers!
3 lbs stew meat
1 stick butter
1 pkg onion soup mix
Cook in crockpot for 6-8 hours.
Serve over rice, noodles, or potatoes
We serve it over egg noodles. It was so so so good!

Braised Brisket w/ Mushrooms
This was amazing! We made this for Easter dinner this year. We loved it! It's another one from Mel.
Note:
If you are having trouble finding a piece of brisket smaller than half a
cow, simply ask the meat counter clerk or butcher to help you.
Generally, they can provide you with a smaller cut of brisket. Flat-cut
brisket is easier to find and a bit more uniform in texture than point
cut (according to Cook's Country). This recipe is easily doubled with
fantastic results.
Ingredients
- 2-3 pounds brisket roast, fat trimmed to 1/4-inch
- Salt and pepper
- 1 tablespoon vegetable or canola oil
- 8 ounces baby bella or crimini mushrooms, quartered
- 1 large yellow onion, chopped
- 1 tablespoon packed brown sugar
- 3 tablespoons all-purpose flour
- 3 garlic cloves, minced
- 1/2 teaspoon dried thyme or 1 teaspoon fresh thyme
- 1 cup low-sodium chicken broth
- 1 cup low-sodium beef broth
- 2 bay leaves
- 1 teaspoon balsamic vinegar
Directions
- Preheat the oven to 300 degrees F. Pat the brisket dry with paper twoels and prick the roast all over with a fork. Cut the brisket in half crosswise into two roasts (just like you'd cut a sandwich or apple in half). Season each roast with salt and pepper.
- In a large nonstick skillet, heat the oil over medium or medium-high heat until rippling and hot. Brown the brisket on both sides (working with one roast at a time), about 3-4 minutes per side. Transfer fat-side up to a 9X13-inch baking dish. Repeat with the remaining roast.
- Pour off all but 1 tablespoon fat from the skillet. Add the mushrooms and 1/8 teaspoon salt and cook over medium heat until the liquid evaporates and the mushrooms are golden brown, about 6-8 minutes. Add the onions and sugar. Cook, stirring occasionally, until browned, about 8-10 minutes. Add the flour, garlic, and thyme and cook, stirring constantly, until golden and fragrant, about 2 minutes. Slowly whisk in the broths and bay leaves, scraping up any browned bits. Bring the mixture to a boil. Reduce the heat and simmer until thickened, about 6-7 minutes.
- Pour the sauce over the roasts in the 9X13-inch pan and cover the dish tightly with aluminum foil. Bake the roasts in the preheated oven until very tender, 4 1/2 to 5 hours. Remove the dish from the oven and let it cool, covered, for 30 minutes to 1 hour, flipping the roasts and recovering the dish halfway through cooling.
- Transfer the roasts to a cutting board and trim any extra fat off, if the roasts are excessively fatty. Strain the sauce from the pan through a fine mesh strainer into a fat separator; reserving the mushrooms. Let the liquid settle and then pour into a microwave-safe bowl, leaving the fat behind. Stir in the vinegar and microwave the sauce for about a minute. If the sauce is too thick, thin with chicken or beef broth. Slice or shred the brisket roasts and place on a serving platter with the reserved mushrooms. Pour the warmed sauce over the meat. Serve immediately.

1 1/2 cups macaroni
1 cup shredded cheddar
Directions:
1 lb ground beef, turkey or chicken
1 tbsp cornstarch
2 tsp paprika
1 tsp onion powder
1 tsp garlic powder
salt and pepper to taste
1 tsp sugar
1 cup hot water
2 cups milk
1 1/2 cups macaroni
1 cup shredded cheddar
Directions:
- Go ahead and brown your ground beef in a fairly deep pan or pot (you’ll be adding a lot of liquid).
- Drain the fat off the meat and put it back in the pan/pot. Add spices, water, pasta and milk and bring to a boil.
- Bring your heat down to a simmer and let simmer until the pasta is finished.
- Add your cheddar cheese and turn off the heat. Stir until the cheese is melted.
- Let sit for a few minutes and serve!
