Quick Brasilian Cheese Rolls (Pao de Queijo)

If you have ever been to Rodizios or Tucanos you probably had their cheese bread and you think it's fabulous and can't seem to get enough of it. I know I can't! My husband served his mission in Brasil and this was one of his favorites. He said that this recipe is closer to how they are in Brasil vs the ones at the restaurant.

1 lg egg
1/2 c. milk
1/4 c. canola oil
1 c. tapioca flour (also labeled tapioca starch)
3/4 tsp kosher salt
1/4 c. grated cheddar cheese
1/4 c. grated parmesan cheese

(You can try different cheeses. Try monterey jack, mozarella, swiss, and gruyere)

Preheat oven to 400. Place egg, milk, oil, tapioca flour, and salt in blender and blend until smooth. Add cheese and pulse 2 times. Immediately pour batter into mini muffin pan, filling about 3/4 full.

Bake for 15-20 min or til puffed and golden brown. Serve warm.

Yield: 16-24 rolls
