We loved this! It was super easy to make and had a great flavor!
1 small spaghetti squash
2 Tbsp butter
2 cloves garlic, minced
1/4 c. parsley or basil
1/2 tsp salt (to taste)
1/4 c. parmesan cheese
Preheat oven to 375. Pierce the squash a few times with a knife. Bake for 60 min or until tender. Let it cool for 3-5 min. Cut in half and remove seeds. Scrape out strands and bake for 10 min. Heat butter and saute garlic and onion. Add parsley and parmesan cheese. Add squash. Mix well. Serve.
