We had a Relief Society Meeting night and we were all asked to bring something to share. This was one of the things there and it was amazing. The person served it with tortilla chips.
2 roma tomatoes, seeded and diced
1 ripe avocado, peeled, pitted, diced
1/4 c. finely chopped red onion
1 clove garlic, minced
1 Tbsp fresh parsley or 1 tsp dried
1 Tbsp chopped fresh oregano
2 Tbsp olive oil
2 Tbsp red wine vinegar
4 oz crumbled feta cheese
Mix tomato, avocado, and red onion in med bowl. Add herbs, olive oil, and vinegar. Stir together gently so the avocado keeps its shape. Stir in the feta. Serve with chips or crackers.
